Jack Daniels Meatloaf (safe for pregnancy):
1.5 lb ground beef (80% lean)
1.5 lb ground turkey
1 lg yellow onion finely diced
5 cloves garlic finely diced
1.5 cup ketchup
2tbsp steak sauce
1 cup shredded mozarella cheese
2-3 shots Jack Daniels or favorite whiskey
1 cup bread crumbs (I use the italian herb kind)
2 tbsp each onion powder, garlic powder
3 tbsp olive oil
salt, pepper, worcestershire (i just walked into the kitchen so i could spell that right) to taste.
simmer ketchup, steak sauce, and 1/3 of whiskey for 3-5 minutes until alcohol has cooked out and left a yummy flavor). Set aside (this is what you brush on top!)
Sautee onions and garlic with 1/3 of whiskey (you may need to add a little olive oil or non stick spray to the pan). Add to large bowl. Add all other ingredients and stir (best to use your hands) and dont forget the last splash of whiskey. (IT ALL COOKS OUT, I PROMISE!!!).
Form into 1/2-3/4 lb mini loafs and put on baking sheet. coat liberally with ketchup mixture. (reserve extra ketchup for hot dogs, burgers, etc later!). bake at 375 for 1/2 hr to 45 mins (depending on elevation). I alwasy check doneness with a meat thermometer because my over times are pretty off, so just watch them! I served it with grilled veggies and a small baked potato.
You can also (if you have kids) make the mini meatloafs in muffin tins to make them kid-sized and decrease cooking time even more! You'd have to experiment with the time as I have not made them this way before!
The ketchup sauce to this is seriously fantastic and I keep it on hand for everything from french fries to morning eggs. It is seriously fantastic.
You can also omit the bread crumbs and scale it down to just make burgers for the family (i did that too...mmm). I just made extra onions/garlic and topped the burgers with it when I served!
