Mmmmmm I just made these, eating them hot out of the oven as I type. Opps had to wipe chocolate off the keys!!!

Chocolate chip cookies


2 1/2 cups flour
1 tsp baking soda
1/2 cup butter
1/2 cup crisco
3/4 cup sugar
3/4 cup brown sugar
1 tsp vanilla
2 large eggs
1 12 oz pkg chocolate chips
1 cup chopped nuts

Preheat oven to 375, Combine flour, and baking soda in small bowl. Beat butter, crisco, sugar, brown sugar, and vanilla in large bowl until creamy, Add eggs, beat well. Gradually beat in flour mixture. Stir in chips and nuts. Drop by rounded tablespoon onto ungreased baking sheet. Bake 9 to 11 minutes or until golden brown.

Chicken tikka masala

. If you love indian your little pregnant belly willl love this!!

INGREDIENTS
1 cup yogurt
1 tablespoon lemon juice
2 teaspoons ground cumin
1 teaspoon ground cinnamon
2 teaspoons cayenne pepper
2 teaspoons freshly ground black pepper
1 tablespoon minced fresh ginger
4 teaspoons salt, or to taste
3 boneless skinless chicken breasts, cut into bite-size pieces
4 long skewers
1 tablespoon butter
1 clove garlic, minced
1 jalapeno pepper, finely chopped
2 teaspoons ground cumin
2 teaspoons paprika
3 teaspoons salt, or to taste
1 (8 ounce) can tomato sauce
1 cup heavy cream
1/4 cup chopped fresh cilantro

take and leave what your want as far as cilantro and stuff

-In a large bowl, combine yogurt, lemon juice, 2 teaspoons cumin, cinnamon, cayenne, black pepper, ginger, and 4 teaspoons salt. Stir in chicken, cover, and refrigerate for 1 hour.

-Preheat a grill for high heat. (can substitute frying pan if you dont want to use skewers and what not. Just chop the chicken small and cook it in a pan)

-Lightly oil the grill grate. Thread chicken onto skewers, and discard marinade. Grill until juices run clear, about 5 minutes on each side.

-Melt butter in a large heavy skillet over medium heat. Saute garlic and jalapeno for 1 minute. Season with 2 teaspoons cumin, paprika, and 3 teaspoons salt. Stir in tomato sauce and cream. Simmer on low heat until sauce thickens, about 20 minutes. Add grilled chicken, and simmer for 10 minutes. Transfer to a serving platter, and garnish with fresh cilantro.

One of my faves!!!! So Easy

Coca- Cola Chicken


Ingredients
About 1 lb Chicken thighs
12oz. Coca-cola (DO NOT SUBSTITUTE - NO Pepsi or cheap brands)
10 oz. Ketchup

Bring coke & ketchup to boil, add chicken, reduce to simmer for 1 hour & 15 mins.
Serve on bed of white rice

Strawberry Pizza

I just got this recipe off allrecipes.com I am gonna make it today. I just thought Id share it!! YUM. You can use refridgerated sugar cookie dough for it instead of the dough ingredients if you want.

INGREDIENTS
• 6 tablespoons butter or margarine, softened
• 1/2 cup sugar
• 1 egg
• 1/2 teaspoon vanilla extract
• 1/4 teaspoon almond extract
• 1 1/4 cups all-purpose flour
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• FILLING:
• 1 (8 ounce) package cream cheese, softened
• 1/2 cup confectioners' sugar
• 2 cups sliced fresh strawberries
• 1 cup sugar
• 1/4 cup cornstarch
• 2 cups crushed fresh strawberries
DIRECTIONS
1. In a mixing bowl, cream butter and sugar for 2 minutes. Beat in egg and extracts. Combine flour, baking powder and salt; gradually add to creamed mixture and mix well. Cover and refrigerate for 1 hour.
2. On a floured surface, roll dough into a 13-in. circle. Transfer to an ungreased 12-in. pizza pan. Build up edges slightly. Bake at 350 degrees F for 18-22 minutes or until lightly browned. Cool completely.
3. In a mixing bowl, beat cream cheese and confectioners' sugar until smooth. Spread over crust. Arrange sliced strawberries on top.
4. In a saucepan, combine sugar, cornstarch and crushed berries until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Cool slightly. Spoon over strawberries. Refrigerate until serving.

Bacon/spinach sandwhich

Get some leafed spinach and chop it up.

Mix the spinach with ranch dressing. Not to much but just enough.

Cut french bread into 1 inch thick slices

Top the bread with the spinach/ranch, some canadian bacon slice's (they sell em pre sliced in a package)
Top it with swiss chees

Put oven on low broil and put them in for no longer than 5 minutes. Just enough to melt the cheese.

French Toast filled with Strawberry/cream cheese
Slice open texas toast. Just slice on the bottom to make a pocket. Make sure it's a good size pocket, but don't cut the other 3 end's open.

Then fill the pocket with cream cheese and fresh strwberry mixture. You'll have to mix this your self.

Then use a sandwhich bag to use like a bakery bag. Cut the tip on one of the end's of bag so you can use it like a bakery bag. Fill up the toast. Gently press together. Then dip the toast in a regular french toast mixture. However you like your's and continue on like your making regular french toast.

Brownie pizza


1 box fudge brownie mix
1 (8oz) package cream cheese softened
1 (8oz) can crushed pineapple, drained, juice reserved
2 tablespoons sugar
2 bananas. sliced and tossed in lemon juice to prevent browning
1 cup fresh strawberries, sliced
1 cup chopped nuts ( i didnt use the nuts)
chocolate syrup for or ice cream topping for drizzling


preheat oven to 350

*grease 15-inch round pizza pan.
*prepare the brownie mix according to the box.
*pour into the prepared pan.
*bake for 20 minutes or until done
*remove from oven and let cool ( i put it in the refrigerater so it would cool faster)
*beat cream cheese, pineapple and sugar together in bowl, use any reserved pineapple juice at this time if needed to soften the mixture so it spreads easier
* spread mixture over cooled brownie crust.
*arrange the banana and strawberry slices over the cream cheese mixture.
*sprinkle with the chopped nuts and drizzle with chocolate ice cream topping.
refrigerate, slice like you would a pizza and enjoy

US METRIC

SERVINGS About scaling and conversions

INGREDIENTS
1/2 cup margarine, melted
1 cup chopped pecans
1 1/2 cups graham cracker crumbs
1 (8 ounce) package cream cheese
1 cup confectioners' sugar
4 cups frozen whipped topping, thawed
1 (3.9 ounce) package instant chocolate pudding mix
1 (3.4 ounce) package instant vanilla pudding mix
3 cups milk
1 (1 ounce) square unsweetened chocolate, melted
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C).
To Make Crust: In a medium bowl, mix together margarine, pecans and graham cracker crumbs. Pat into a 9x13 inch baking pan. Bake in preheated oven for 20 minutes or until lightly browned; allow to cool completely.
In a medium bowl, beat together cream cheese and confectioners sugar until smooth. Fold in 1 cup of the whipped topping. Spoon mixture into graham cracker crust.
Prepare chocolate and vanilla puddings with milk as per package directions. Allow pudding to set before pouring on top of the cream cheese layer. Spread remaining 3 cups of whipped topping over pudding layer; swirl melted chocolate throughout whipped topping.
Cover and refrigerate for about an hour. For leftover pie, keep frozen in a tightly covered container. When ready to eat, just cut off a piece and allow to thaw; keep rest frozen.

Well, this is something quick easy and a huge favorite in our house. Don't aske me about the counts though cause I have no idea!!!

Cheesy Taco mac

1 small box velveeta ( I use 2%)
1 can rotel
1 small box macaroni
1 # lean ground beef, or turkey
1 packet of Taco seasoning

Brown meat, add taco seasoning and 1/2 cup water, simmer.
Boil macaroni according to package.
Melt velveeta and add rotel, undrained.

Mix in one big pot and serve. SOOOOO yummy!

Banana Split Cake

2 cups graham crackers
6 TBS melted butter
2 cups powdered sugar
2 eggs
1 stick butter
1 tsp vanilla
1 med can crushed pineapple (drained)
3 bananas
Cool whip
cherries
walnuts

Mix together graham cracker crumbs and melted butter, press into 9 by 13 pan. Beat powdered sugar and butter together, add eggs and beat until light and fluff, add vanilla. Beat again to mix. Spread evenly over crumbs. Slice bananas lengthwise and place on top of pudding layer. Drain pineapple and spread over bananas. Spread cool whip evenly and sprinkle w/ nuts. Dot with cherries.

2 X 4 Stew

2 cans minestrone
2 cans rotel (mild or original, depending on if you like spice)
2 cans pinto beans
4 lbs hamburger meat
1 tsp garlic seasoning
Salt and pepper to taste
2 or 3 Bay leaves

Combine canned products in stew sized pot with stove on medium heat. Brown hamburger meat (you want the pieces as small as you can get them)! Add meat to stew pot, along with salt, pepper, garlic seasoning, and bay leaves. Cook on Medium for about an hour, then turn to simmer or low heat for 20 minutes or so!

This is great reheated, and if you're entertaining guests, you can double the amount of canned products.

Mexican Chicken Casserole
Makes: 1 9 x9 pan

1 reg bag Nacho Cheesier Doritos
1 can rotel
1 can chicken (can use more chicken, I usually do)
1 can chicken broth
1 bell pepper
1 onion
1 lb velveeta cheese
2 cans cream of chicken soup

Soup Mixture:
Combine: 2 cans Cream of Chicken, chicken broth, and rotel in bowl and set aside.

Step 1: Put chicken in greased pan
Step 2: Add diced pepper and onion
Step 3: Layer semi thin slices of velveeta on top of combination
Step 4: Add majority of crushed doritos
Step 5: Spoon soup mixture on top of layers
Step 6: Add a thin layer of crushed doritos (you don't want to use the whole bag)

Bake in oven at 350 degrees for 30-45 minutes.

I LOVE this dish. My Nannie gave me the recipe when I married my husband, and he LOVES it! There are rarely leftovers when I make this! Plus it's REALLY easy, and SO hard to mess up! So, if you're like me, and not exactly the best cook.. this is the PERFECT dish for you!
If you want to make a 12 x 9" pan, double chicken, chicken broth, and rotel! The rest is perfect!

White Chocolate, Chocolate Cookies

Original recipe yield:
3 dozen

PREP TIME 25 Min
COOK TIME 10 Min
READY IN 35 Min

INGREDIENTS
1 cup unsalted butter
1 cup white sugar
3/4 cup packed brown sugar
2 eggs
1 1/4 cups unsweetened cocoa powder
1 3/4 cups all-purpose flour
2 teaspoons baking soda
2 cups white chocolate chips

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a large bowl, cream together the butter, brown sugar and white sugar until light and fluffy. Add the eggs one at a time, beating well with each addition. Combine the cocoa, flour, and baking soda, gradually stir into the creamed mixture. Finally, fold in white chocolate chips. Drop by rounded spoonfuls onto the prepared cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until puffy but still soft. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Pasta Salad


Lately, we've been making & keeping in the fridge this reallllly good pasta salad...
It has penne pasta, grilled chicken, kalamata olives, red onions, cubed mozzarella, cucumber, bell pepper, peppercinnis, and pear tomatoes. Then you just make a simple vinaigrette with olive oil, balsamic, red wine vin, lemon juice, and dijon mustard. It's super easy ---- and the only cooking time is boiling the pasta & grilling the chicken! You toss it all together & give it a day to marinate in the fridge. Then pull it out as you want! The best part is - it only gets better with time. Also, make a huge amount so it lasts a long time!

Italian Wedding Soup

I love to cook and have tons of fun recipes so I will find some for you. One I made tonight was a soup that is so easy and so good, it's like italian wedding soup without the meat. It's a good way for me to get more fluids.

You saute garlic in a pot and add about 3 cups of chicken broth (I make mine with bouillon cubes). Bring that to a boil and add a block of frozen spinach and a cup of orzo pasta and a bit of salt. When that has boiled for about 5 minutes I add a can of diced tomatoes and about 2 tablespoons of paramsean cheese. Let it cook until the pasta is done and the spinach is broken up. Serve with grilled cheese. It's SO good.

I'll keep looking. That's just what I made tonight. Much healthier than canned soups because it has less sodium.
