We always cook Mongolian Chicken... BBQ style I never post recipes and if my hubby caught me this would be BAD! lol family secret like Buches baked beans... rofl... Ok anyway here goes..
1.1 pack of Chicken ( 1 pack of breasts are best) but any chicken can be used
2. 1 Large White onion.
3. 2 Large cloves garlic (elephant garlic cloves is what we use..some dont like alot of garlic though)
4. 3 Cups of Soy sauce
5. 1 1/2 cups White Vinigar
6. 1 1/2 cups water
7. 1 tsp Salt / 2 tblsp pepper
8. 1 BBq sauce of yoru choice
You must have a big bowl and space in the fridge!
Chop the onions and garlic finely, mix the liquids in the bowl add the chicken and chopped garlic/onions add salt and pepper. you can shake with a lid on or just stir it around. Put it in the fridge to marinate
We let ours sit over night since it gives it an AWESOME taste deep in the chicken But is you dont like heavey soy flavor then you may want to only keep it in for 3-4 hours.
Have that BBQ hot and ready! slap em on the grill add your BBQ sauce and be prapared for heaven. <heart> I have never been able to eat bbq chicken again unless its BBq like this!! Hope you enjoy!

1 container Cool Whip
1 jar Marshmallow Puff Stuff

Fruit Pizza:
SUGAR COOKIE
1/2 c marg or butter 1/2 c shortening
1 1/2 c sugar 2 eggs
1/4 tsp salt 1 tsp baking soda
2 tsp cream of tartar 2 3/4 c flour
1 tsp vanilla
Cream butter and sugars together then add dry ingredients. Spread into a cookie sheet or jelly roll pan and bake for 10-12 mins at 350 degrees.
Cream Cheese Frosting:
16 oz cream cheese
5 Tbls fruit juice(lime or lemon...could probably use orange too but I haven't tried that)
1 1/4 c sugar
Cream together and spread on sugar cookie
I usually use apples, peaches, plums,kiwi,strawberries, blueberries, raspberries, blackberries,(not always on the same one usally depends on whats in season)Just use whatever you prefer and put on top.
(If you want to cheat and makeit the really easy way you can buy the sugar cookie dough in the package and use whip cream instead of the cream cheese for the "sauce". I just prefer this one )

Calico Beans:
Fry together
1/2 lb bacon
1/2 lb ground beef(or turkey if you prefer)
1 c onion
In large pot mix together
1 can pork n beans
1 can kidney beans
1 can garbanzo beans
1 can lima beans
3/4 c packed brown sugar
1/2 cup ketchup
2 Tbls vinegar
2 tsp salt
2 tsp mustard
Add ground beef mixture to the bean mixture and let simmer for an hour or so.
If you don't like these beans you can use others these just give it the pretty "calico" colors. I usually serve with cornbread(mostly cause I can't think of anything that goes better with beans than cornbread

Jessies Juicy Burgers
INGREDIENTS
- 1 pound ground beef
- 1 egg
- 2 teaspoons minced garlic
- 1 tablespoon steak sauce (e.g. A-1), or to taste
DIRECTIONS
In a medium bowl, mix together the ground beef, egg, and garlic. (I added a little bit of pepper, oregano, and seasoning salt here as well. You can add whatever spices you prefer.) Mix in steak sauce until mixture is sticky feeling.
Form into 3 or 4 balls, and flatten into patties. Fry in skillet until both sides are browned.
Serve on buns with the usual trimmings.

Lemon Garlic Tilapia
INGREDIENTS
* 4 tilapia fillets
* 3 tablespoons fresh lemon juice
* 1 tablespoon butter, melted
* 1 clove garlic, finely chopped
* 1 teaspoon dried parsley flakes
* pepper to taste
DIRECTIONS
1. Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
2. Rinse tilapia fillets under cool water, and pat dry with paper towels.
3. Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
4. Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.
I threw in a can of green beans around the fish and lightly salted them....came out great! You could add whatever veggies you prefer if you choose to do so!

Corned Beef
INGREDIENTS
- 1 (5 1/2 pound) corned beef brisket with spice packet
- 7 small potatoes, peeled and diced
- 4 carrots, peeled and diced
- 3 cloves garlic, chopped
- 1 medium onion, diced
DIRECTIONS
- Preheat the oven to 300 degrees F (150 degrees C).
- Place the brisket in the center of a roasting pan. Arrange the potatoes and carrots around the sides. Place the onion and garlic on top of the roast, and season with salt and pepper. Empty the seasoning packet over the roast, and pour enough water into the pan to almost cover the potatoes. Cover with a lid or heavy aluminum foil.
- Roast for 5 to 6 hours in the preheated oven, until the roast is so tender it can be flaked apart with a fork.

No-Bake Lime Chiffon Pie
1/3 cup lime juice
1 envelope unflavored gelatin (2 tsp.)
1 tsp. grated lime peel
1/2 c. fat free sweetened condensed mlk (from 14 oz can)
2 drops green food color, 1 drop yellow (if desired)
4 cups thawed cool whip
1 graham cracker pie crust
1. In 1 qt saucepan, place lime juice; sprinkle with gelatin. Let stand 1 minute to soften. Heat over meat heat about 2 minutes, stirring occasionally, until gelatin is dissolved. Remove from heat, cool slightly. Stir in lime peel.
2.In medium bowl, mix condensed milk with food colors. Stir in lime juice mixture. Using rubber spatula, fold in all but 1/4 c. of cool whip. Spread in pie crust, smoothing top. Refrigerate at least 2 hours or until firm. Before serving, garnish with remaining cool whip.

Raspberry Lemonade Cake
1 c. very hot water
1 box (4 serving size) raspberry flavored gelatin
1 box Betty Crocker SuperMoist white cake mix
1/2 c. frozen (thawed) lemonade concentrate
1/4 c. water
1/3 c. vegetable oil
4 egg whites
1c.cool whip
1 container Betty Crocker whipped vanilla frosting (12 oz)
1. Heat oven to 350, 325 for dark or nonstick pan. Spray only the botton of 13x9 inch pan with baking spray with flour. In small bowl, mix hot water and gelatin until completly dissolved, cool slightly.
2. In large bowl, beat cake mix, 1/4 c of the gelatin mixture, 1/4 c of the lemonade concentrate, the water, oil and egg whites on low speed for 30 seconds. Beat on medium speed 2 minutes. Pour into pan. Reserve remaining gelatin mixture and lemonade concentrate.
3. Bake 30-35 minutes or until toothpick inserted comes out clean. Poke warm coke every inch with fork. Remove 1 tbs. of the reserved gelatin mixture to microwavable custard cup or small bowl. In another small bowl, mix remaining gelatin mixture and lemonade concentrate; pour slowly over cake. Cool completly.
4. In medium bowl, fold together frosting and cool whip, frost cake. Microwave 1 tbs. gelatin mixture uncovered high 10 seconds to liquefy. Using 1/4 tsp. pleace small drops of mixture over frosting. With spoon or toothpick, swirl.
Store in refrigerator.

Nigella Lawson's Caramel Croissant Pudding
Great dessert recipe for the holidays... Thanksgiving or Christmas!
Preheat oven to 350 degrees
Tear 2 stale croissants into pieces and put in a small gratin dish.
Put 1 c. sugar and 2 tbsp. water into a saucepan, and swirl around to help dissolve the sugar before putting the saucepan on the burner over medium to high heat.
Caramelize the sugar and water mixture by letting it bubble away until it all turns a deep amber color. This will take 3-5 minutes.
Turn heat down to low and add ½ c. heavy cream. Whisk in ½ c. whole milk and 2 tbsp. bourbon. Take off the heat and, still whisking, add 2 eggs, beaten.
Pour the caramel bourbon custard over the croissants and leave to steep for 10 minutes if the croissants are very stale.
Place in oven for 20 minutes... serves 2 greedy people!

Lemonade pie
1 graham cracker pie crust
1 can condensed milk
1 (12 oz.) tub Cool Whip
1 can frozen lemonade
Blend lemonade and condensed milk until creamy. Add Cool Whip and blend well. Pour into pie crust. Chill until set, about 1 hour. Top with Cool Whip, if desired.

A note to anyone that makes corned beef.
My grandmother made the best, and being very irish she was good at it.
Only buy the FLAT brisket, not the point cut. A lot less fat, and much better tasting. Leftovers are wonderful too.

Jar Sauerkraut
Sliced corned beef
Thousand island dressing
Layer cheese on bread, top with sauercraut, cover with dressing follwed by corned beef. Butter and grill. The BEST!

Grilled Portobello Mushrooms with Tomatoes and Fresh Mozzarella
3 tablespoons olive oil, plus extra for greasing grill pan
4 large portobello mushrooms (about 5 inches in diameter), stemmed
Salt and freshly ground black pepper
3 tablespoons extra-virgin olive oil, plus extra for drizzling
2 cloves garlic, minced
3 small to medium sized vine ripened tomatoes, cut into 1/2-inch pieces
8 ounces fresh water-packed mozzarella, drained, cut into 1/2-inch cubes
1/4 cup chopped fresh basil leaves
Prepare the barbecue aka grill (medium-high heat).
Drizzle 3 tablespoons of olive oil over both sides of the mushrooms. Sprinkle the mushrooms with salt and pepper. Drizzle olive oil on grill pan to prevent mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side.
Meanwhile, whisk the extra-virgin olive oil and garlic in a medium bowl to blend. Add the tomatoes, cheese, and basil and toss to coat. Season the tomato salad, to taste, with salt and pepper.

yesterday I made some sauted cauliflower.
What you need:
1 califlower.. cut i into florettes
1 tablespoon minced garlic
3/4 tablespoon olive oil.
1/4 tspn of salt
boil the cauliflower in water (add a pinch of salt to the water) for about 10 minutes. til its crispy soft. (if that makes sense)
drain and let sit for a few minutes
saute minced garlic in the olive oil (you can add more of both if you like.)
dont let the garlic burn.. add the cauliflower and saute for 5 minutes
add salt to taste
and for a little flavor.. ad some spice. crushed pepper etc
goes great with cheese
