Cheesy Spinach Squares!

Ingredients:

2 pkg. frozen spinach
3 whole eggs
1 cup white flour
1 cup skim milk
1 stick of margarine [you can use butter, i just never have.]
1 tsp. baking power
1 tsp. salt
24 oz Shredded Sharp Cheddar Cheese [a package and a half]
8 oz. Shredded Mozzarella Cheese

Directions:

Preheat oven to 350 F.
While oven is preheating, place 9x9 pan in the oven with the stick of margarine until it melts.
Place frozen spinach in a strainer and rinse until thawed with warm water. [This is to prevent from accidentally cooking the spinach while thawing in the microwave!]
Drain well, add to large mixing bowl.
Combine rest of ingredients and whisk slowly.
Once the butter is melted, add recipe to the pan and cook for 30 minutes or until the top is slightly browned. If you undercook, it'll be more like a quiche and much harder to make into squares!!

Chili's Salsa

You can make this sauce easily at home.

1 (14 1/2 ounce) can tomatoes and green chilies
1 (14 1/2 ounce) can whole canned tomatoes (plus the juice)
4 teaspoons jalapenos (canned,diced, not pickled)
1/4 cup yellow onions (diced)
1/2-3/4 teaspoon garlic salt
1/2 teaspoon cumin
1/4 teaspoon sugar

In food processor place jalapenos and onions.
Process for just a few seconds.
Add both cans of tomatoes, salt, sugar, and cumin.
Process all ingredients until well blended but do not puree.
Place in covered container and chill.
A couple of hours of chilling will help blend and enrich the flavor.
Serve with your favorite thin corn tortilla chips.

Banana Hotcakes with Honey butter:

HONEY PECAN BUTTER:

1/2 cup butter, softened

1/4 cup honey

1/3 cup chopped pecans, toasted

HOTCAKES:

1 cup all-purpose flour

2 tablespoons sugar

2 teaspoons baking powder

1/2 teaspoon salt

1/8 teaspoon ground cinnamon

1 egg

1 cup milk

1 cup mashed ripe bananas (about 2 medium)

3 tablespoons vegetable oil

2 teaspoons lemon juice

Maple syrup, optional


SERVINGS 6
PREP 20 min.
COOK 5 min.
TOTAL 25 min.

DIRECTIONS
In a small mixing bowl, beat butter and honey until smooth. Stir in pecans; set aside. In a large bowl, combine the flour, sugar, baking powder, salt and cinnamon. In a small bowl, whisk the egg, milk, bananas, oil and lemon juice; stir unto dry ingredients just until moistened.
Pour batter by 1/4 cupfuls onto a greased hot griddle. Turn when bubbles form on top; cook until second side is golden brown. Serve with honey pecan butter and syrup if desired. Yield: 6 servings.

Sloppy Joe Casserole
2 cans Big and Buttery crescent rolls
1 lb ground beef, browned
1 can sloppy joe mix
1 bag shredded cheddar
sesame seeds (optional)
-brown ground beef, mix with sloppy joe mix
-spread 1 can crescent rolls in square pan
-pour sloppy joe mix in pan and cover with bag of cheese
-cover with can of crecent rolls and bake at 400 for 30 min

Buffalo Chicken Dip
1 lb boneless skinless chicken
1/4-1/2 cup hot buffalo sauce
8 oz cream cheese softened
8 oz pkg shredded mozzarella/cheddar
1/2 cup ranch or bleu cheese
-boil chicken, drain, let cool
-spread cream cheese on baking dish
-spread dressing
-shred chicken and mix with hot sauce, spread
-sprinkle cheese
-bake with aluminum foil cover @350 for 30 mins

Mexican Meatloaf
1 lb ground beef
1 cup crushed doritos
1 egg-beaten
1pkt taco seasoning
1 1/2 cups shredded colby jack
1 1/2 cups salsa
1/2 can refried beans
-combine first 4, 1/2 cup cheese, 1 cup salsa
-place in pan
-spread beans over meatloaf
-drizzle remaining salsa
-bake at 400 for 50 min
-sprinkle cheese, bake 5 mis

Banana Split Cheesecake Squares
2 cups graham cracker crumbs
1/3 cup melted butter
1 cup sugar divided
3 pkg cream cheese, softened
1 tsp vanilla
3 eggs
1/2 cup mashed bananas
1 cup halved strawberries
1 banana sliced tossed with 1 tsp lemon juice
1 can (8 oz) pinaeapple drained
-mix crumbs, butter, 1/4 cup sugar onto bottom of 13x9 baking pan
-mix cream cheese, sugar, vanilla w/mixer, add eggs, mix, stir in mashed bananas, refrigerate 3 hrs, top w/ strawberries, bananas, and pineapple

Broccoli Casserole
1 can cheez whiz
1 pkg frozen broccoli, thawed
1 cup minute rice
1 can cream of muchroom
1 can cream of celery
italian bread crumbs
-melt cheese in microwave for easy mixing
-mix all ingredients but bread crumbs
-pour into lightly greased pan
-sprinkle w/bread crumbs
-bake @ 350 for 30 min

Apple and Raisin Oven Pancake
1 lg baking apple, cored, thinly sliced
1/2 cup golden raisins
2 tbs packed brown sugar
1/2 tsp ground cinnamon
4 eggs
2/3 cups milk
2/3 cups all-purpose flour
2 tbs butter, melted
-preheat oven to 350, grease pie plate
-mix apples, brown sugar, cinnamon in bowl, pou onto pie plate
-bake 10-15 min (til soft)
-increase oven to 450
-whisk eggs, milk, flour, & butter in bowl, pour over apple mixture
-bake 15 min (til pancake is brown)
-invert onto serving dish

Mexican Layer Dip
1 (16 oz) refried beans
1 pkt taco seasoning
1 cup salsa
sour cream
1 cup shredded lettuce
1 cup shredded cheese
1/2 cup chopped green onions
1 sm can ripe olives, pitted
-mix bean and seasoning
-spread in 9 in pan
-layer sour cream, salsa, lettuce, cheese, green onions, olives
-refridgerate

Hot Fudge Pudding Cake
1 1/4 cups sugar divided
1 cup all-purpose flour
7 tbs cocoa powder, divided
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/3 cup melted butter
1 1/2 tsp vanilla extract
1/2 cup light brown sugar
1 1/4 cups hot water
whipped topping
-preheat oven to 350
-stir 3/4 cup sugar, flour, 3 tbs cocoa, baking powder, salt.
-stir in milk, butter, vanilla, beat until smooth
-pour into ungreased 9-in pan
-stir remaining 1/2 cup sugar, brown sugar, and remaining 4 tbs cocoa
-sprinkle evenly over batter, pour hot water over top. DO NOT STIR
-bake 35-40 min or until center is almost set
-let stand 15 min, spoon into dishes spooning sauce from pan over top, garnish w/ whipped topping

Spinach Sensation
1/2 lb bacon slices
1 cup sour cream
3 eggs, separated
2 tbs all-purpose flour
1 tbs butter, melted
1 (10 oz) pkg frozen spinach, thawed and squeezed
1/2 cup shredded sharp cheddar
1/2 cup dry bread crumbs
-cook bacon til crisp, crumble
-combine sour cream, egg yolks, flour, and pepper in bowl
-stir 1/4 eggs into micture, fold in remaining egg
-arrange in a greased pan 1/2 spinach, half mixture, 1/4 cup cheese, repeat, cheese last
-bake @ 350, 30-35 min

Another mac-n-cheese recipe! I got this from one of my friends.

1 lb. elbow macaroni
1 jar cheeze wiz
1 can evaporated milk
1 egg
1 stick butter
1 small block cheddar cheese, thinly sliced

Preheat oven to 350. Cook macaroni according to package directions. Meanwhile, whisk the cheese wiz, milk, and egg together in medium bowl (make sure it's completely combined- it helps if you mix egg and cheese wiz together first then add milk a little at a time). Drain macaroni and combine with cheese mixture. Grease a 2 qt. baking dish. Place half of macaroni in dish, top with pats of butter and cheese slices. Bake for 30-35 minutes or until cheese is lightly browned.

For the cheese, you could use shredded to cut down on prep time. This is my all-time fave mac recipe Yum! Now I'm hungry for it.... lol

BEEF STROGANOFF:

1-1 1/2 lbs. beef for stew, cut into 1" chunks
1 1/2 c. beef broth
2 TB ketchup
1/8 tsp garlic salt
1/3 c. chopped onion
4 oz. can sliced mushrooms, drained
2 TB cornstarch
1c. sour cream
1 TB butter

Melt butter in a large skillet. Brown beef. Add broth, reserving 1/3c for later use, ketchup, and garlic salt. Bring to a simmer and cover with a lid. Simmer, stirring occasionally, for 1 hour or until meat is tender. Add onion and mushrooms and cook until onion is soft. Mix cornstarch and reserved broth; pour over beef mixture. Stir until thickened. Stir in sour cream and heat through. Serve over hot cooked white rice or cooked noodles. Enjoy!

Yield: 2-4 servings depending on appetites. I usually eat about a 1/4 of it and hubby eats the rest. He can never get enough of it This also makes good leftovers too. Hubby hates leftovers but will never turn this down for a "take to work" lunch option ;)quote

Pineappple cheese casserole

2 (15 oz) cans chunk pineapple, drained - squeeze out some extra juice
1 cup white sugar (can use less)
3/4 cup all-purpose flour
2 cups shredded sharp Cheddar cheese -best to buy a block and shred before using
1 roll of ritz crackers
1 stick of melted butter

mix pineapple, sugar, cheese and flour together in a bowl. pour in a casserole dish, crush ritz crackers in to small pieces and spread over top, pour melted butter over dish.
