Chicken salad sandwiches
- 2 skinless, boneless chicken breast halves
- 1/2 red bell pepper, seeded
- 1/4 cup mayonnaise
- 1 tablespoon heavy cream
- salt and pepper to taste
- 4 slices white bread
DIRECTIONS
- Bring a large pot of water to a boil; add chicken and cook until no longer pink in the center and the juices run clear, about 20 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Drain, cool and chop.
- Bring a small pot of water to a boil; add the bell pepper and cook until soft, about 10 minutes.
- Combine the bell pepper, chicken, cream, and mayonnaise in a food processor. Blend until mostly smooth. Season with salt and pepper. Spread about half of the mixture on each of two slices of bread and sandwich with the remaining bread.

CHICKEN NOODLE SOUP
Ingriedents
-1 1/2 pound of chicken breast
-2 chicken bouillon cubes
-1 can condensed cream of chicken soup.
- 1/4 tsp black pepper
- 1/4 tsp garlic powder.
-1/2 bag of egg noodles
Directions:
-Boil chicken in two qourts of water. Add chicken bouillon cubes, After chicken is done remove from heat and shred. Then return chicken to pot.
-Add cream of chicken soup to pot and let simmer over meduim low heat. Add egg noodles. and simmer untill tender. (ADD CREAM OF CHICKEN LAST so the milk doesn't curdle and evaporate out)
season with salt and pepper.

Frosty Fruity Sodas
2 cups cranberry juice cocktail, chilled
2 cups raspberry sherbet
3 cups (24 ounces) ginger ale, chilled
Candy sprinkles, if desired
1. Pour 1/4 cup juice into each of 8 glasses or paper cups. Top each with 1/4 cup sherbet and 3 ounces ginger ale.
2. Sprinkle with candies. Serve immediately.
Look for fun straws in party stores to add a party finish to these fruity sodas. Top off the sodas with an animal cracker to complete the zoo theme.
Substitution
Any sherbet works in place of the raspberry. Rainbow sherbet is perfect for those who can't pick just one flavor!

Cranberry Waldorf
* 1 1/2 cups chopped cranberries
* 1 cup chopped red apple
* 1 cup chopped celery
* 1 cup seedless green grapes, halved
* 1/3 cup raisins
* 1/4 cup chopped walnuts
* 2 tablespoons white sugar
* 1/4 teaspoon ground cinnamon
* 1 (8 ounce) container vanilla low-fat yogurt
Directions
1. In a medium bowl, combine cranberries, apple, celery, grapes, raisins, walnuts, sugar, cinnamon, and yogurt. (I chop cranberries in a food processor, and it works great). Toss to coat. Cover, and chill 2 hours. Stir just before serving.

Broccoli Salad
- 1/4 cup bacon bits
- 1 head fresh broccoli florets
- 1 cup shredded Cheddar cheese
- 1/2 cup raisins
- 1/2 cup hulled sunflower seeds
- 1 red onion, chopped
- 1 cup creamy salad dressing, e.g. Miracle Whip ™
- 1/4 cup white sugar
Directions
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- In a large bowl, mix together the bacon, broccoli, cheese, raisins, onion and sunflower seeds.
- In a small bowl, whisk together the creamy salad dressing and sugar. Pour over broccoli mixture and toss well to coat. Cover and refrigerate until chilled.

Tater Tot Casserole
1 lb hamburger meat
1 onion
8 oz pkg cheddar cheese
1-2 cans cream soups (depending on how much you are making) Any are good, mushroom, celery or even cream of chicken
1 - 2 cans green beans
Brown hamburger meat adding chopped onions when meat is almost done. Heat cream soup in pan, keep warm. Using casserole dish, put green beans on bottom, adding drained hamburger meat and adding about half of the soup mixture. Top with tater tots, covering with remaining soup mixture. Bake for about 45 mins or until tots are done and browned. Top with cheddar cheese and bake just until melted. This casserole is great with or without the green beans. Is also good with asparagus as an option.

Ohh man, these recipes are great! Thought I would post my own to keep this bumped. My mom taught me this because it's so easy and I'm not that great at cooking. I bake! This recipe also allows for a lot of leeway for a variety of tastes.
Easy Hamburger Pie
1 lb ground hamburger (or as much as you like!)
2 cans tomato soup (we use the campbells condensed)
2 cans corn (regular, not cremed)
Box of instant mashed potatoes
Milk
Butter
Salt
Optional: Green beans, Garlic
Preheat oven to 375
Brown hamburger in pan, drain and place back on stove on medium (unless you're running out of time you can cook on high, just don't burn it ). Mix in the corn and tomato soup (if using condensed soup, make sure to add the water too like the can instructs). Optional: Add green beans
On the side make mashed potatoes using milk, butter, and/or salt per box instructions for about 6 servings. Optional: Add Garlic to taste or water in place of milk.
Once the meat and veggies are done, place in baking pan (size varies depending on quantity made). Add potatoes on top, but don't make it smooth! Sloppy is good. IE: looks like little mountains. this makes it easier to tell when the potatoes are done cooking.
Cook until the meat is bubbly and the tips of those mountains are golden brown. Appx: 30-45 mins.
What's great about this dish, is that the leftovers are wonderful! You can even make this in advance and store in the fridge without the potatoes and microwave it too (Great on sandwiches). The only reason it even bakes is for the potatoes.
Great for kids, and easy on the stomach. Add spices for variation!

3 cheese manicotti!!
one of my fave foods and also a favorite to make! my hubby loves it..and now that i'm pregnant, i prefer meatless dinners because the meat seems to cause more indigestion sometimes..soo..here it is!
ingredients:
7 manicotti shells
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated parmesan cheese
1/3 cup parsley
1/4 tsp lemon peel
1/8 tsp ground nutmeg
1 egg
marinara sauce (whatever you like, homemade or store bought)
cook manicotti according to package directions and drain, let cool. in a bowl, stir together egg, ricotta, mozzarella, parmesan, parsley, lemon peel, and nutmeg. spoon mixture into manicotti shells. heat oven to 350 degrees F. Spread marinara sauce on bottom of 12x7 1/2 in baking dish. arrange filled pasta in a single layer over sauce and cover with more sauce and mozzarella and parmesan cheeses. cover and bake 35-40 mins.

Campbell's easy chicken and rice bake
this recipe is so easy and comes off the back of a campbells soup can label!
ingredients
1 can mixed veggies, drained (14 1/2 oz)
1 can condensed cream of mushroom soup (10 3/4 oz)
3/4 cup uncooked regular white rice
4 skinless boneless chicken breast halves
mix veggies, soup, and rice with 1 cup water in a 2 qt shallow baking dish. place chicken on veggie mixture. sprinkle with paprika and pepper if desired.
cover and bake at 400 degrees F for 40-45 mins or until chicken and rice are done.

Fried Pickles
[I copied this recipe but its the one I use, except I dont use Essence I use seasoning salt b/c it tastes better =)]
12 dill pickle spears
Essence, recipe follows
3 cups flour
2 egg yolks
3/4 to 1 cup beer
Pinch of baking powder
Salt and pepper
Oil for frying
Preheat the fryer. Season the pickles with Essence. Season 1 cup of flour with Essence. In a mixing bowl, whisk the yolks and 3/4 cup of the beer. Season the mixture with salt and pepper. Whisk in enough flour to form a batter. If the batter is too thick add the remaining beer to thin the batter. Dredge the spears in the seasoned flour. Dip the spears in the batter, letting the excess drip off and coating the spears completely. Gently lay the spears in the hot oil and fry until golden brown, about 3 to 4 minutes. Remove the spears from the oil and drain on a paper-lined plate. Season the spears with Essence. Serve the spears with ketchup
